Maximum Living St. Patrick’s Day Feast

Many people get intimidated when thinking about creating the traditional Irish corned beef dinner but it actually is one of the easiest and most tasteful meals you can make. This year I am going to share with you my recipe for the best St. Patrick's Day feast you have had, and you will see just how easy it is to hit that pot of gold every time!

 

Irish Soda Bread
Ingredients:

2cups flour
1 teaspoon baking soda
½ teaspoon salt
1/2 teaspoon nutmeg
1 1/2 tablespoons sugar
6 tablespoons shortening
2/3 cup raisins (I mix gold and brown)
1 cup buttermilk

Directions:
Preheat oven to 375 degrees.

In a large bowl, sift together the flour, baking soda, salt, nutmeg, and sugar. Using a pastry blender or fingertips, work the shortening into the flour until the consistency is the same as that of small peas. Stir in the raisins and mix to distribute evenly. Gradually stir in the buttermilk, ¼ cup at a time, using only enough to allow the dough to come together. Knead the dough for 1-2 minutes. Shape the dough into a round loaf and place on a greased baking sheet. Cut an x on the top and over the sides of the loaf. Bake for 45 minutes or until the bread sounds hollow when tapped. Cool on a rack! Yum!!

Corned Beef
When you're buying your brisket, make sure you allow for one pound per person.

Put it into a large baking pan covering brisket with water halfway up, also add quarter-slices of sweet onion. Cover with foil and cook 3.5-4 hours at 350 F. Some people like to add or substitute a good red wine for this process. Add your carrots and new red potatoes (sliced in quarters) one hour before serving so as not to overcook. Once cooking is completed, display on a beautiful platter and gently sprinkle fresh parsley flakes over entire dish.
