Maximum Living Summertime Salsas
As outdoor parties are planned and summer weather starts to appear, there is nothing better than a fabulous summer salsa to heat up any party. From strawberries to mangos, tomatillos to jalapenos, these Maximum Living summertime salsa recipes are sure to make your taste buds dance!

Island Salsa
Serves 3 cups

1cup navel orange (2 large)
1 cup pineapple
1 cup kiwi
½ cup small jicama
2 Tbsp. fresh lime juice
2 Tbsp. fresh orange juice
1 Tbsp fresh minced jalapeno peppers
2 Tbsp. cilantro, chopped
¼ cup red onion, chopped
1/8 tsp. cayenne pepper
¼ tsp salt

Instructions:
Remove skins from fruit. Cut orange, pineapple, jicama, and kiwi in the same shape and size (about ½ to ¾ inch diced). Combine all ingredients in a mixing bowl.


Strawberry Salsa
½ medium red onion, chopped
1 jalapeno pepper, minced
½ red bell pepper, stemmed, seeded, and chopped
½ green pepper, stemmed, seeded, and chopped
¼ cup fresh cilantro, chopped
½ pint fresh strawberries, hulled and sliced
½ cup fresh orange juice
2 tablespoons extra virgin olive oil
Salt and pepper

Instructions:
Place all ingredients in a large mixing bowl and toss to combine. Cover and refrigerate at least 2 hours, up to 4 hours. Fifteen minutes before serving, remove the salsa from the refrigerator so it loses some of its chill.

Avocado Salsa
2 avocados, peeled, seeded, and chopped
Juice of one lime
½ cup onion, finely chopped
½ yellow pepper, seeded and finely chopped
3 plum tomatoes, chopped
1 jalapeno, seeded and finely chopped
Salt and pepper

Instructions:
Combine all ingredients in a bowl and gently toss together with a fork.

Fresh Salsa
2 cups finely chopped tomatoes
1 small onion, finely chopped
1/3 cup canned green chilies (less if you prefer)
¼ cup finely chopped fresh cilantro
1 tablespoon fresh lime juice
A pinch or two of cayenne pepper (optional)

Instructions:
Combine all of the ingredients, except the cayenne, and mix well.
Add the cayenne if it is not spicy enough. This will keep for about one week in the refrigerator.

All of these salsas are great with tortilla chips, over meat and fish, or even on freshly made crostini!
