Maximum Living Pumpkin bread with Orange Icing
This is the month for everything pumpkin, so let's make pumpkin bread. My recipe
is a little different in that I add orange to my pumpkin bread and I top it with
orange cream cheese frosting! YUM EEEE!!!
Prep: 25 minutes
Makes: 3 large loaves
Bake: 55 minutes or until toothpick comes out clean Oven: 350F
Ingredients:
3 cups sugar
1 cup cooking oil
4 eggs
3 1/3 cups all-purpose flour
1 tablespoon orange zest
2 teaspoons baking soda
1 ½ teaspoons salt
1 teaspoon ground cinnamon
1 teaspoon ground nutmeg
2/3 cup water
1 15 ounce can pumpkin
Directions:
Grease bottom and ½ inch up sides of three 8x4x2 inch loaf pans; set aside. In an extra large mixing bowl beat sugar and oil with an electric mixer on medium speed. Add eggs and beat well; set aside. In a large bowl combine flour, orange zest, soda, salt, cinnamon and nutmeg. Add dry mixture and water alternately to sugar mixture, beating on low speed after each addition just until combined. Beat in pumpkin.
Spoon batter into prepared pans, bake in a 350 degree oven 55 to 60 minutes or until wooden toothpick inserted in centers comes out clean. Cool in pans on wire racks for 10 minutes Remove from pans. Cool completely on wire racks.
Wrap and store overnight before slicing.
Now just to make it perfect, you have to add my orange cream cheese frosting.
Cream Cheese Frosting
Ingredients:
2 3 ounce packages of cream cheese, softened
½ cup unsalted butter softened
4 ½ to 4 ¾ cups sifted confectioners sugar
1 teaspoon natural orange flavoring
1 tablespoon real orange juice
Directions:
Beat cream cheese, butter, natural orange flavoring and orange juice with an electric mixer until light and fluffy. Gradually add 2 cups sifted powdered sugar, beating well. Gradually beat in enough of the remaining sifted powdered sugar to make frosting that is easy to spread. Once you have spread over the top of the bread, add a little more orange zest for taste and texture.
